EE Celebration | Automotive Grand Opening
In March, we spent an 5 incredibly long days designing, planning, and coordinating a "Sandsational Grand Opening" celebration for an Sands Chevrolet in Arizona. Amidst the trying economy, the 12 acre 95,000 square foot dealership opened in late December 2008 with a huge success. The March celebration started off with a 450 person dignitaries group for a red ribbon cutting ceremony with local city officials and the chamber of commerce. The show room was filled with vintage cars, the new 2010 Camaro, inspirational speakers, divine food, custom house wine and the melodies of an amazing string quartet. In case you are wondering, yes, the orange buzzard is a cake. It was a surprise for the owner of the dealership as his name is Buzz and their mascot is this adorable Buzzard, also named Buzz ---- "Have you Heard the Buzz?!"
Following Friday evening was a 2 day public open house which brought in more than 4,000 people from surrounding neighborhoods. The kids immensely enjoyed the huge bounce slide, rock climbing walls, sports bounce, smoked bbq and all the raffle prizes that were given away by 2 local radio stations. And finally, come Monday, there was a beautiful luncheon hosted for the GM Retirees where more than 500 people enjoyed the afternoon reminiscing about past sales days and learning about the new products. In all, it truly was a Sandsational Grand Opening and we wish many successes to this dealership!!

{Meatloaf Cupcakes w/ Potato Frosting}
For the “cupcake”:
Soak the breadcrumbs in the milk and set aside.
Sweat the vegetables in olive oil until softened. Transfer to a deep bowl and use an immersion blender to puree; alternatively, puree in food processor.
Mix the three meats, eggs, breadcrumbs, parmesan, parsley and vegetable puree in a large bowl until an even consistency is reached.
Place meat mixture in greased muffin tins and bake until brown and shrunken away from the sides, about 20-25 minutes. Remove from tin and cool on rack.
For the “frosting”:
Prepare one sachet of instant mashed potatoes according to package instructions. To prepare the other, substitute beet juice from canned beets for the water called for in the instructions. Allow to cool.
Transfer each batch of mashed potato into a separate pastry bag (or Ziploc bag with a snipped-off corner) with your favourite pastry tip. Pipe onto cupcakes and decorate with diced green pepper.
Reheat in oven or microwave before serving.

{DIY: J is for Jeweled Monogram Cake Topper}
- Jewelry and Metal Glue {E6000}
- 1/8" Aluminum or Mirrored Letter/s with Spikes
- Flatback Rhinestones {in any color}
- Toothpick
- Beeswax
- Wax Paper
- Spread out a piece of wax paper so you don't get glue on anything
- Roll up a little piece of beeswax into a small ball and place it on the end of a toothpick. This will create a nice adheasive tool for you to be able to pick up your rhinestones.
- Gently spread out rhinestones on the wax paper next to your custom cut letter
- Place dots of small amounts of glue on your letter in little sections at a time. I can dry fairly quickly, so just work in small sections and don't use too much. It can get messy.
- Pick up your rhinestones with the toothpick and beeswax and place them on the glue spots. Gently press down, but not too hard.
- Let it sit for a few hours to dry.

{DIY: C is for Cute Cake Stand}
I think when serving cupcakes or mini cakes they look so much better when served on a cake stand. In this tutorial I will show you how to make a cake stand that is very easy and quick to make. You can adapt it to the color or pattern on your cakes. I have used thick gift wrap paper to cover the cake boards. But you could ice your cake boards with rolled sugarpaste/fondant icing instead. Only remember to ice the cake board a few days in advanced so they can dry throughly.
Note: remember when you have assembled the cake stand with cakes on it, not to move it around too much.
SUPPLIES:
- Cake boards: 1×8″, 1×10″, 1×12″ {Note: if you want one more tire on the stand. You will need 1×14″ cake board.Polysthyrene cake dummies 2″ high: 2X5″ and 2×6″. You will need 2×7″polysthyrene cake dummies for one more tire.}
- Satin ribbon for the cake board and the polysthyrene cake dummies
- Thick paper or sugarpaste/rolled fondant icing
- Glue stick and regular glue {Note: use school glue}
- Metal pins
- Sharp scissor
- pencil
Start by glue the dummies together. So they can dry completely.
Step 2:
Take your chosen ribbon, and attach it on the dummies with a metal pin.
Note: you can also glue the ribbon on. But I want to use the dummies again. So therefor I have not glued my ribbon on
Step 3:
When the dummies are dry, start by wrapping the ribbon around them so it slightly overlap all the way to the top.
Note: the metal pin on the picture, was only put in so I could take the picture.
Step 4:
Attach the ribbon with a metal pin.
Step 5:
Lay the cake boards on the choosen paper. Take your pencil and draw a line around the board on the paper. Cut out wih a pair of scissors.
Step 6:
Take the glue stick and add glue throughly all over the board.
Step 7:
Place the paper cirkel on the cake board and rub it lightly.
Step 8:
Now it is time to attache the ribbon to the side of the cake board. Add a metal pin to just keep the ribbon in place.
Step 9:
If you like you can rub a bit of glue on the side so the ribbon stays in place. End by taking the metal pin and attache it to the overlaps.
Step 10:
Now your cake stand is finished.
Note: I have not assembled my cake stand with glue, but you could do that for an extra safety. If you use iced cake boards you can use royal icing to fix it if you like.

{1920’s ‘Sweet Cigar Box’ Cookie Bar}
Certain items just scream luxury. Cigars are one of them. But how does one go about creating a cigar themed buffet that every guest can enjoy? Why turn the cigars into cookies and display them with the same panache and decadence one would expect for the real thing.
I love that for authenticity, each cookie came replete with an actual ‘vintage’ paper cigar label.
The ‘Sweet Cigar Box’ display could be a yummy idea for your event that will not only wow your guests, but will make a lot less smoke and a lot more Mmmmm…
Recipe ideas for these stogie sweets could begin with a myriad of handmade butter tuille, Florentine, and meringue cigar-shaped cookies. Some flavors could include white chocolate pistachio, Valrhona dark chocolate, and butterscotch almond all elegantly displayed in the vintage cigar boxes of your choice.

{Smiley Face Cake Pops}
Here's how you can make your own!
1 box cake mix (cook as directed on box for 13 X 9 cake)
1 can frosting (16 oz.)
Wax paper
Yellow candy melts (1 lb. pkg.)
Lollipop sticks
Edible ink pens
1.) After cake is cooked and cooled completely, crumble into large bowl.
2.) Mix thoroughly with 1 can frosting. (I use the back of a large spoon, but it may be easier to use fingers to mix together. But, be warned, it will get messy. Also, you may not need the entire can of frosting, so start out by using almost the entire can and add more if you need to.)
3.) Roll mixture into quarter size balls and place on wax paper covered cookie sheet. (Should make 45-50)
4.) Melt chocolate in the microwave per directions on package. (30 sec intervals, stirring in between.)
5.) Dip the tip of your lollipop stick in a little of the melted candy coating and insert into the cake balls. (Insert a little less than halfway.)
6.) Place them in the freezer for a little while to firm up.
7.) Once firm, carefully insert the cake ball into the candy coating by holding the lollipop stick and rotating until covered. Once covered remove and softly tap and rotate until the excess chocolate falls off. Don't tap too hard or the cake ball will fall off, too.
8.) Place in a styrofoam block to dry.
9.) Once dry, draw faces with an edible ink pen and allow ink to dry!
Note: I think cake pops are a little more difficult to make than the cupcake pops because of trying to get the candy coating smooth. So, If you haven't made them before, check out this post for red velvet cake balls and this one for cupcake pops.
